3 Very British Crisp Sandwiches
This weekend, having finished Netflix and every puzzle in the house, I set myself a serious challenge: to create ‘the world’s best’ sandwich, without spending top dollar on posh loaves or funky fillings.
The result? Not one, but three crisp sarnies that will make you wonder why you’ve wasted every other lunchtime eating lesser sandwiches. Sure, you’ll make a crumby mess with every bite, but that’s exactly what the hoover is for. Tuck in.
Crunchy Prawn Cocktail with Skips
Ingredients (serves 2)
- 150g pre-cooked prawns
- 15ml ketchup
- 25ml mayonnaise
- 5ml Henderson’s Relish
- 1 avocado
- 6 little gem lettuce leaves
- 1 bag of Skips crisps
- 4 slices of white bread
Method (10 mins)
Step 1: Combine the ketchup, mayonnaise, Henderson’s Relish and a pinch of salt — this is your cocktail sauce
Step 2: Add the prawns to the cocktail sauce and give everything a good mix
Step 3: Cut the avocados in half, and slice them lengthways
Step 4: Build your sandwich by layering the gem lettuce, avocado slices, prawn cocktail and a generous handful of skips crisps on a slice of bread. Then top with the second slice, cut in half and enjoy!
Tip: If you’re prepping in advance, add the avocado and crisps when you’re ready to serve so they stay super fresh
Curry Coronation Egg Mayo with Poppadoms
Ingredients (serves 2)
- 2 hard-boiled eggs
- 3 tbsp mayonnaise
- 5g fresh coriander
- 1 tbsp curry powder
- 1 tomato
- ½ cucumber
- 3 tbsp mango chutney
- ½ tsp nigella seeds
- Sensations ‘Lime and coriander’ poppadoms
- 4 slices of bread
Method (15 mins)
Step 1: Pick the coriander leaves and set aside for garnish. Finely chop the stalks and throw them into a bowl with the mayonnaise and curry powder. Mix thoroughly
Step 2: Peel and roughly chop the hard-boiled eggs, then add to the curried mayonnaise. Use the back of a fork to mash the eggs into smaller pieces and mix into the sauce — this is your coronation egg mayo
Step 3: Finely slice the cucumber and tomato. Grill your bread on one side to stop it getting soggy
Step 4: Build your sandwich. Start with 1 slice of bread, toasted side up. Spread with a layer of mango chutney then top with sliced tomato, cucumber and your coriander leaves. Dollop over the coronation egg mayo and sprinkle with nigella seeds. Add a large handful of crisps then finish with the second slice of bread, toasted side down
Want it vegan? Replace the egg-mayo with this chickpea filling. And if you’re feeling really fancy, use naan instead of bread. Just heat the naan in the oven for a couple of minutes until warmed through, then top with the same fillings.
Bangin’ Aubergine BLT with Frazzles
Ingredients (serves 2)
- 4 slices of white bread
- 2 tsp smoked paprika
- 1 avocado
- 1 aubergine
- 1 tomato
- 5g Dijon mustard
- 15ml soy sauce
- 1 little gem lettuce
- 45g free-from mayonnaise
- Frazzles or Texas BBQ Pringles if you’re vegan
Method (40 mins)
Step 1: Preheat the oven to 200°C/ 180°C (fan)/ Gas 6
Step 2: Mix the soy sauce with the smoked paprika, 1 tbsp vegetable oil and a grind of black pepper in a bowl — this is your ‘bacon’ flavouring
Step 3: Slice the aubergine lengthways, as finely as you can (approx. 0.5cm in thickness). Then coat in the ‘bacon’ flavouring and pop each slice onto a lined baking tray. Bake them in the oven for 30-35 mins or until they start to crisp — this is your aubergine bacon
Step 4: Now wash your lettuce and slice the avocados and tomatoes
Step 5: Combine the mayo and Dijon mustard with a pinch of salt
Step 6: Warm your bread in the oven for 2-3 mins, then spread it with half the Dijon mayo and layer up with the avocado, four gem leaves, tomato slices, aubergine ‘bacon’ and Frazzles (or Pringles). Serve the Dijon mayo on the side
