This festive spiced syrup is made for your foodie friends

‘Tis the season for sugar, spice and all things nice and this simple syrup is just the thing to get the Christmas mood going. Infused with toasted orange peel and a warming hit of festive spices, trust us when we say it’s a Christmas cupboard staple in the making. Use it to spike your hot toddies or glaze your Boxing Day ham – either way you’ll be coming back for more.
Spiced Toasted Orange Syrup
Time 10 minutes
1 orange
1 cinnamon stick
8 cloves
1 star anise
100g brown sugar
100g caster sugar
Step 1 Peel the orange, avoiding the pith.
Step 2 Add the peel to a medium saucepan and toast until the peel goes slightly brown, then add the spices to toast for a minute more, being careful not to burn them.
Step 3 Add the sugar and cook for another minute before adding the juice from the orange and then 500ml of water.
Step 4 Let the syrup cool completely before straining and adding to a clean bottle. Store in the fridge for up to 3 weeks.
How to use
Christmas Ham Orange spiced roast ham? Count us in. Cook the ham as you would normally then glaze with 3-4 tbsp of the syrup and finish off in the oven.
Chocolate Orange Brownies Add 4 tbsp of syrup to your favourite brownie recipe, stir till well combined and then bake as usual.
Spiced Cranberry Hot Toddy Take your Christmas hot toddies to the next level by adding a tbsp of syrup per person to cranberry juice. Warm through and enjoy.
