6 Super Easy Summer Desserts
With these long balmy days we’re enjoying, it’s no wonder people are neglecting their kitchens. We all want to get outside and make the most of these summer months. We also want to eat wonderful desserts. Who says we can’t do both? Enter our list of easy summer desserts that are simple, speedy, and sure to impress.
-
Strawberry Fool
More like fool-proof! This dessert is stupidly easy to make, using fresh strawberries, of course. It’s a reinvention of the classic strawberries and cream – a dream team if we ever tasted one.
-
Lemon Meringue S’mores
We’ve borrowed the nostalgic American campfire classic and adapted it to the British palette. Start with perfectly charred marshmallows and add some decadent sweet lemon curd sauce for a summery alternative to chocolate. Finish by smushing it all between homemade shortbread (instead of graham crackers which are basically just inferior digestives anyway).
-
Lemon and Raspberry Posset
Arguably the easiest summer dessert after scooping ice cream from a tub? You can whip up a lemon posset with only three ingredients: lemons, cream and sugar. If you need a little extra challenge, try making your own rosemary shortbread to go along with your possets.
-
Barbecue Jerk Pineapple With Chocolate Rum Sauce
And now for something completely different… this jerk pineapple treat combines an adventurous mix of spice and boozy rum chocolate sauce with the sweetness of fresh pineapple. It’s effortless to make and ready in minutes, but exciting enough to get people tasting (and talking).
-
Rosewater & Earl Grey Kulfi
We’ve given kulfi (like ice cream, but better) an English garden upgrade by using earl grey and rosewater for an unforgettable fresh flavour.
-
“Grown Up” & Kids Popsicles
Bored of drinking your gin & tonics? Now you can enjoy them as a frozen treat, while your kids get an alcohol-free watermelon version. These popsicles might look professional, but even a kitchen novice can master them in moments.
