Marmite Fried Chicken, Chips & Apple Slaw
Marmite Lovers, brace yourselves for a double dose of Marmite-y goodness. In this recipe, you’ll add Marmite to our cheat’s buttermilk marinade for your fried chicken. Then, get this, you’ll also whip up a Marmite mayonnaise for dunking!
Marmite Fried Chicken, Chips & Apple Slaw

Ingredients
1 apple
1 little gem lettuce
1 tsp dried oregano
½ tsp cayenne
1 tsp ground all spice
4 tbsp cornflour
1 tsp ground paprika
15ml white wine vinegar
16g Marmite
3 white potatoes (about 300g)
60ml mayonnaise
80g natural yogurt
250g chicken breast
plain flour
salt
pepper
vegetable oil
Method
Step 1: Preheat the oven to 200°C / 180°C (fan) / 400°F / Gas 6, and boil a kettle.
Step 2 Cut the potatoes (skins on) into thin chips, then add to a baking tray with a generous drizzle of vegetable oil and a pinch of salt and pepper. Mix together until all the potatoes are well seasoned.
Step 3: Cook the chips for 25-30 min or until golden and crisp.
Step 4: Slice the chicken breasts into strips.
Step 5: Add a handful of flour to a plate with a generous pinch of salt.
Step 6: To a second plate, add the cornflour, cayenne pepper, dried oregano, all spice, paprika, a generous pinch of black pepper and 2 tbsp plain flour and mix until combined – this is your spice mix.

Step 7: Add the natural yogurt and half the Marmite to a small bowl and mix together – this is your cheat’s Marmite buttermilk.
Step 8: Coat the chicken strips in the plain flour, tap off the excess then add them to the cheat’s Marmite buttermilk.
Step 9: Next, press the chicken strips into the spice mix firmly, making sure each one is evenly coated.
Step 10: Heat a wide-based non-stick pan with a very generous drizzle of vegetable oil (enough to fully cover the base of the pan) over a medium high heat.
Step 11: When the pan is hot, add the Marmite-coated chicken strips and cook for 5-7 min on each side or until the chicken is crispy and cooked through (no pink meat!).
Step 12 :Whilst the chicken is frying, wash and shred the little gem lettuce and slice the apples finely. Add them both to a bowl with 1 tbsp mayonnaise and the white wine vinegar and mix it all together.
Step 13: Add the remaining mayonnaise and Marmite to a bowl and mix together to make your Marmite mayo.
Step 14 Serve the Marmite fried chicken with the chips, apple slaw and Marmite mayo. Yum!
