If you love hot sauce, this hack will stop you pouring leftover beer down the sink. Instead, kick your mouthfuls up a gear with this hoppy, citrusy, fiendishly spicy sauce you can knock up in minutes.
Hot sauce, a.k.a. the ultimate antidote to blah food. Lip-tingling, brow-sweatin’ chillies were first used almost 7000 years ago in Central America. Later the Aztecs used them for everything from hot sauce to healing, fumigating to fighting (pepper spray = ouchie). Not only did the Aztecs invent hot sauce, they gave us all sorts of hellishly spicy sauciness like salsa, smoky chipotle and mole.
In the States, the popularity of hot sauce exploded with the invention of Tabasco in Louisiana, leading to total nationwide obsession.
Recipe:
Prep time: 10 mins
Total time: 20 mins
2 oranges
4- 5 red chillies
3 red peppers
330ml IPA beer
3 tbsp maple syrup
100ml cider vinegar
Step 1: Roughly chop the peppers and chillies. Zest the oranges then remove the pith and chop the flesh into chunks.
Step 2: Pop everything into a medium sized saucepan, stir to combine and bring to a simmer. Cook for 10 minutes.
Step 3: Remove from the heat and cool. Blend the mixture into a smooth sauce. Store in a clear jar or bottle in the fridge.
Step 4: Use your hot sauce whenever your meal needs a kick or as a spicy marinade for chicken or veg.
