Indian Spiced Roast Potatoes
Take your ‘tatoes to the next level this Christmas with a spicy twist on the classic roastie. These Indian spiced potatoes are absolutely bursting with flavour as they are, but you can play with the spices to fit the palettes of your household.
Ingredients (Serves 2 as a side)
- 400g Potatoes
- ½ tsp Turmeric
- 1 tbsp Curry Powder
- 1 tsp Black Mustard Seeds
- 1 tsp Nigella Seeds
- 10g Coriander
- 1 Red Chilli
Method (Takes 40 Minutes)
- Chop the potatoes (skins on) into bite-sized pieces and add to a baking tray
- Drizzle with vegetable oil, add the spices with a pinch of salt and give everything a good mix up
- Put the tray in the oven for 30-35 min or until crisp and cooked through. Roughly chop the coriander and slice the red chilli. Serve garnished with sliced red chilli and roughly chopped coriander.
