Want to become a pickling pro? Quick pickled vegetables (or ‘quickles’ as we’ve affectionately named them) are the best place to start. This simple method is easy, quick and makes the perfect zingy topping for soups, salads, sandwiches, curries and more. Plus it’s a great way to preserve any fruit or veg you won’t eat in time.

Wait, what is a quick pickle?
You can ‘quickle’ just about any fruit or vegetable. All you need is vinegar, water, salt, a pinch of sugar and a blend of herbs and or spices. Oh, and a fridge!
What’s great too is they only need a day or so to hang out in their brine before they’re ready to snack on.
How long will my quick pickle last?
They’re at their best after 1-2 weeks, but a quick pickle should last around 2 months in the fridge (unless you eat them all first!).
