Keep the kids happy with this Fab-ulous superfood ice lolly
We all know how hard it is to tear the kids away from their favourite frozen treat and get them to munch on some fruit instead. Take the humble Fab. Strawberries, vanilla, chocolate and sprinkles. No wonder it’s irresistible.
To help your family satisfy their sweet tooth, we’ve gone back to the drawing board to create a fruit-filled Fab like no other. With a tangy berry base that’s coated in a layer of creamy coconut and banana “nice cream” plus a melty dark chocolate topping covered in hazelnuts and chia seeds, this one goes down a real treat.

Fab Ice lolly

Ingredients
- 600ml coconut yoghurt
- 500g mixed berries
- 150g dark chocolate
- 40g chopped hazelnuts
- 2 tbsp chia seeds
- 2 tbsp maple syrup
- 2 ripe bananas
- Lolly moulds
Method
Step 1 Blitz the yoghurt, banana and maple syrup in a blender until silky smooth. Pour the mixture into your lolly moulds until around two thirds full. Pop them into the freezer for an hour to firm up.
Step 2 Whilst your first layer is in the freezer, blend together your mixed berries till smooth, adding a couple of tablespoons of water if needed. Pour the mixture into your moulds all the way to the top and put them back in the freezer.
Step 3 Melt the chocolate in the microwave – be careful not to burn it! One at a time, remove a lolly from the mould and dip the top into the chocolate. Sprinkle chia seeds and chopped hazelnuts over top. Serve and enjoy before it melts.
