How To Make Vegetarian Calzone (The Easy Way)
Last week our Weekly Munch readers (Not subscribed to our weekly newsletter? Sign up here!), told us that life indoors would be heaps better with an oozy, cheesy, crispy calzone you could make at home.
So we created this easy recipe that delivers everything you’d want – three cheeses (in generous quantities), crispy golden-brown crust, and lots of rich marinara dipping sauce.
I had some frozen peas and limp vegetables that needed using up so this one’s veggie, but swap in any fillings you like: Salami, pre-cooked bacon, roasted veg – just cut them into bite-size pieces and throw it in your mix.
Here’s your recipe: The easiest, cheesiest homemade calzone. If you make it yourself, don’t forget to tag us on Instagram or Facebook @goustocooking. We want to see those cheese pulls!
Ingredients
Serves 1
100 g (1 portion) Premade pizza dough (Or try making it yourself with our pizza dough recipe!)
1 Head of broccoli
60 g Peas, frozen
85 g Ricotta (Can’t find it? Pop cottage cheese in a sieve, rinse under a cold tap and weigh out the cheese curds)
10 g Italian hard cheese, grated
75 g Mozzarella, shredded
4 tbsp Tomato paste
1 tsp dried oregano
Pinch of sugar and salt
Method
Step 1: Cut the broccoli into florets and roast in a preheated oven at 220ºC/200ºC fan/gas 7 for 10 minutes.
Step 2: Remove your tray from the oven and add the frozen peas. Return to the oven and continue to cook for a further 5 minutes.
Step 3: Once roasted, mix the vegetables in a bowl with the three cheeses.
Step 4: Roll your dough out into a large circle (12-15cm).
Step 5: Add your filling to one half of the dough, fold the other half over and crimp the edges together with a fork to keep the filling in.
Step 6: Place in the oven and bake for 20 minutes until golden brown.
Top tip! Once done, leave it to cool for 5 minutes. (The filling inside is very hot!)
Step 7: While your calzone bakes, add the tomato paste, 8 tbsp water, oregano and a pinch of salt and sugar to a small saucepan and simmer until thick and saucy. This is your marinara dipping sauce.
Step 8: Serve your calzone with the marinara sauce to the side.
