Cinq Centimes From Senegal
If you’ve ever walked the streets of Senegal, you won’t have missed these moreishly nutty biscuits.
So simple, yet so delicious, these biscuits don’t take long to make. Plus if you’re a peanut butter fan, you’ll go nuts for how, well, peanutty they are. With a light sprinkling of sea salt, they’re the perfect, not-too-sweet accompaniment to your afternoon espresso.
Super Simple Cinq Centimes
Makes: 25 – 30 cookies
Prep time: 25 mins
Total time: 45 mins (plus cooling time)

225g unsalted butter
225g caster sugar
1 egg
1 tsp baking powder
330g plain flour
5/ 6 tbsp peanut butter (we love Manilife)
1 pack chocolate covered peanuts
Flaky sea salt (optional garnish)
Method
Step 1: Preheat your oven to 180ºC (or 200ºC fan)
Step 2: In a mixing bowl, whip your sugar and butter together until fluffy and pale in colour. When you rub a bit between your fingers, it should feel smooth without any sugar crystals left.
Step 3: Beat in your egg until well combined. Add the flour and baking powder, and stir until it all comes together into a firm ball.
Step 4: Line two baking trays with greaseproof paper.
Step 5: Roll out your dough until it’s about 1cm thick. You can split the dough into batches to make it easier to manage. Cut the dough into circles using a cookie cutter, then add the cookies to your lined baking trays and cook for 8-10 minutes.
Step 6: Once they’re done, add your cookies to a cooling rack and wait until completely cool before decorating.
Step 7: Spread an even swirl of peanut butter onto each of the cookies cookies before pushing 5-6 chocolate peanuts on the top. Repeat with all the remaining cookies.
Top tip: Traditionally, these Senegalese biscuits are topped with plain peanuts and not the chocolate coated ones so feel free to swap to plain if you prefer.
Step 8: Garnish with an optional sprinkle of flaky sea salt to bring out the sweet, nutty flavour.
