Bingsu (Taiwanese Shaved Ice)
If no meal is complete without an ice cream for dessert, we have something you need to try.
Put the Magnum back in the freezer, and give that Twister to your nan, because this is a dessert you’ll want to save some room for. It’s our Taiwanese street food-inspired coconut-infused shaved ice, stuffed silly with tropical fruit, condensed milk and even some sweets. What more could you want?
Bingsu Shaved Ice Recipe
Coconut and Mango Shaved Ice
Serves 2
Cook time: 30 minutes + overnight
500ml coconut water
2 tbsp agave syrup or honey
1/2 mango
2 tbsp jelly sweets or jelly beans
10g toasted coconut flakes
4 tbsp sweetened condensed milk
Method
Step 1: Add the the coconut water, agave and 4 tbsp water to a tub
Step 2 Mix everything together and allow the mixture to cool, put the lid on and freeze overnight.
Step 3: Before serving, cut your mango into small cubes (need help preparing your mango, check out the instructions in this recipe
Step 4: Take the coconut ice out of the freezer and leave on the side for 10 minutes or so until you can remove it from the tub. Wrap one end of the ice in a clean tea towel and using the biggest holes on a box grater, grate the ice until you have a large pile of shaved ice.
Step 5: Place your shaved ice into a bowl and decorate with diced mango, jelly beans and toasted coconut flakes. Drizzle over the condensed milk and eat straight away.
