Veggie Sausage & Egg Breakfast Muffin
Happy Freedom Day, England! If your evening plans tonight are looking a little lively, save your future self a headache and make sure you’ve got everything in for the perfect breakfast in bed.
This veggie take on a breakfast classic is the ideal post-party pick-me-up!
Ingredients (for 2):
35-45 mins
For the muffin:
2 English muffin
3 Veggie sausages or 2 x patties
2 cheese slice
2 Eggs
For the hash browns:
1 medium Sweet potato
1 tsp Paprika
1 tbsp Flour
2 tbsp Vegetable oil
½ tsp Salt plus extra for seasoning
Black pepper for seasoning
Recipe:
Step 1: Preheat oven to 180c / 160c fan
Peel your sweet potato, then using the coarser side on your grater, grate the potato and put in a bowl. Sprinkle over ½ tsp of salt and leave for 15 minutes.
Step 2: After 15 minutes, put the mix in a clean cloth or muslim cloth and squeeze out as much moisture as possible from the grated potato. Add the potato back into the bowl and sprinkle over the flour, paprika and season with black pepper.
Step 3: Form the mix into 4 hash browns and add to a baking tray lined with greaseproof paper, then cook in the oven for 25 – 30 minutes, flipping halfway through.
Step 4: Meanwhile, squeeze your sausages out of their casings and form 2 patties. Add these to your hash brown tray and cook for 15 minutes, flipping once halfway through.
Step 5: For the eggs, you’ll need 2 egg rings or heat proof circular cookie cutters. Put 1 tbsp of vegetable oil in a medium frying pan which has a lid, (be sure to put a little oil on your egg rings so that they don’t stick) place your rings into the pan and once hot crack an egg into each ring.
Cook covered on a medium heat for 6 – 7 minutes until the whites are no longer translucent.
Step 6: Now it’s time to assemble. Slice your english muffin in half, then on the bottom half place your cheese slice, followed by the sausage patty, then top with your egg and finish with your muffin lid.
Step 7: Serve with the hash browns on the side and your choice of sauce for dipping.
