Welsh Rarebit Cheese Scrolls
When it comes to cheese on toast nothing beats a cheesy, golden rarebit straight from the grill.
But, let’s face it, though the taste is second to none (few pairings are more perfect than beer and cheese!), it’s not the prettiest of national dishes.
So we’ve given the flavours of Welsh rarebit a Gousto twist with these fluffy, cheddar-stuffed scrolls that are as fun to make as they are to eat.
Rarebit Cheese Scrolls Recipe
Serves 8
Cooking time: 1 hour 30 minutes
Ingredients
400g frozen pizza dough, defrosted
For the filling
25g unsalted butter
25g plain flour
120ml beer (preferably stout) or milk
150g Mature cheddar, grated
1 large egg, lightly beaten
1 tbs Worcestershire sauce
2 tsp English mustard
Pinch cayenne pepper (optional)
Method
Step 1: Preheat the oven to 180ºC (fan). Line a baking tray with greaseproof parchment.
Make the filling
Step 2: In a small saucepan, melt the butter over a medium heat. Sprinkle over the flour and continue to cook for 1 minute. Remove from the heat and add the beer (or milk if using instead) a little at a time to ensure the mixture is smooth. Return the mixture to the heat and cook, stirring continuously for 2 minutes until thick and smooth.

Step 3: Remove the sauce from the heat. Stir through 100g of cheese – the heat from the sauce will melt it – followed by the egg, Worcestershire sauce and cayenne pepper (if using). Let the sauce cool while you prepare the dough.
To assemble
Step 4: Roll the pizza dough out to a rectangle measuring 40cm x 30cm. Spread the filling evenly over the dough, leaving a 2cm border along both of the long edges. Sprinkle over the reserved cheese.
Step 5: Starting with one of the long sides, roll the dough into a log, gently pinching the seam together. Using a serrated knife, cut the log into 12 rounds. Place the scrolls onto the prepared tray, cover with cling film or a damp clean kitchen towel and set aside for 30mins to rise.
Step 6: Bake for 25-30 minutes. Let the rarebit scrolls cool slightly before serving.
