Timo’s 3-Ingredient Vegan Peanut Butter Cookies
This week, our CEO shared his recipe for his super-easy vegan cookies, made with just three ingredients: peanut butter whole rolled oats and bananas. That means no eggs, sugar or gluten!
If you’re in the mood for a snack, these chewy, slightly crispy-edged cookies would definitely hit the spot. But you know what would really take them over the top? Adding nuts, chocolate chips or raisins to the mix. So bake a batch, grab a brew and tag us @goustocooking so we can see how you got on!
Oh, and there’s no need for special equipment, so there’s no excuse not to make them.
3 Ingredient Vegan Peanut Butter Cookies
Makes 12 Cookies
Cooking time: Under 30 minutes
Ingredients
2 ripe bananas, peeled
320g whole rolled oats
125g peanut butter of choice – we love Manilife Original!
Step 1: Preheat oven to gas mark 3/195C/175C fan and line a large baking tray with greaseproof paper.
Step 2: In a large bowl mash the bananas until almost smooth.
Step 3: Add the peanut butter and oats and stir to combine.
Step 4: Divide the mixture into 12 equal portions and shape into cookies. These cookies don’t change shape or spread in the oven so you can space them closely together.
Step 4: Bake in the oven for 15 minutes until they are golden brown around the edges. Allow to cool completely before storing them in an airtight container for up to 3 days.
