5 Ways To Use Up Leftover Roast Chicken
If you’ve just tucked into a golden brown, crispy-skinned, home-cooked roast chicken (for our easy roast chicken recipe, click here), I’m betting you’ve got a fair bit of leftovers. Don’t let that delicious chicken go to waste!
Turns out there are loads of tasty ways to get the most from your roast. We’re always fighting food waste here at Gousto, so obviously we recommend you simmer the chicken bones to make a chicken stock. But what about the leftover meat?
It’s time to add some flavour and healthy protein to your mid-week suppers! I’ve tweaked five of my favourite chicken recipes from Gousto to give you some new ideas for using up those leftovers.
Crunchy Pulled Chicken Salad
I love this salad with leftover roast chicken, because it only takes around 10 minutes to dish up! It’s super satisfying too, thanks to the exciting textures and flavours from the apple, celery, toasted almonds and creamy wholegrain mayo dressing.
Gousto tip! Pull your leftover chicken apart with forks (or fingers!). Then pop it in the microwave with a plate over it for a minute or two while you prep your salad. This will warm it through without drying it out.

Pulled Hoisin Chicken & Sesame Noodles
When I’m tempted to order a cheeky Chinese takeaway, this is the recipe I whip out to satisfy that craving.
Using leftover chicken and a few easy ingredients, this stir fry is so much faster and healthier than ordering in. The sauce is deliciously sweet and fiery, and it’s so filling too. Plus, because the chicken’s already cooked, it’s on the table in 15 minutes!

Chicken & Stuffing Sarnie With Plum Chutney
Listen, I’m not about to tell you how to make a sandwich. I’m telling you to make this sandwich.
Take your leftover roast chicken and stuffing, put both on a baking tray, and heat in the oven at 180 C for 10 minutes. Then add a dollop of sweet, tangy plum chutney and a few sea salt crisps for extra crunch to construct what is, in my opinion, the best sandwich in history.
Pulled Chicken Teriyaki Donburi Bowl
People say life is all about balance, but I’ve got to be honest: I definitely don’t get enough sleep, and my portions are probably a little too big.
But when I make this donburi rice bowl – with its bold sesame, soy and ginger flavoured teriyaki chicken, piquant pickled radishes and crunchy fresh vegetables – at least I know my dinner’s found some zen, even if I haven’t.
Fragrant Chicken Saag Masala & Pilau Rice
We Brits never need an excuse to indulge in a curry. And while it’s tempting to grab one from your local Indian, when you’ve got leftovers it’s far more economical (and eco-friendly!) to make it yourself.
One of my favourites is this chicken saag masala. Not only is the rich tomato curry hearty and warming, the fragrant pilau rice adds so much depth of flavour – with only a couple of spices added.
And because your chicken’s already cooked, all you need to do is pull it apart and add it to your aromatic curry sauce.
