Not to be confused with the Aubergine & Harissa Stew above, the Caponata is a Sicilian sweet and sour stew that’s a little similar to ratatouille, the homeliest of French dishes. Sweetness comes from sultanas, sourness from aubergine and red wine vinegar, and a super filling, wholesome base from millet.
