All Day English Breakfast With Chips And Beans inspired by Groundhog Day (1993)

Whether it’s breakfast or dinner, serve up the fullest English with sausages, chips, homemade beans, mushrooms, a fried egg and tomatoes – with buttery toast on the side. Bill Murray, eat your heart out.
Ingredients
For 2 people [double for 4]
- 1 ciabatta
- 125g cherry tomatoes
- 5.5g vegetable stock mix
- 2 white potatoes
- 32g tomato paste
- 4 Proper Porker sausages
- 80g chestnut mushrooms
- 20g rocket
- 2 British free-range eggs
- 185g canned cannellini beans

- Butter, olive oil, pepper, salt, sugar, vegetable oil

For 2 people [double for 4]
Step 1
Preheat the oven to 210°C / 190°C (fan) / gas 6. Boil half a kettle. Chop the potatoes (skins on) into chips. Add the chips to one side of a large baking tray with a drizzle of vegetable oil and a pinch of salt.
Step 2
Add the sausages to other side of the tray. Put the tray[s] in the oven for 30 min or until the sausages are cooked through and the chips are golden and crisp
Tip: Cooking for 4? Use 2 trays!
Step 3
Meanwhile, drain and rinse the cannellini beans. Heat a pot with a drizzle of olive oil over a medium heat. Once hot, add the drained cannellini beans to the pot with the vegetable stock mix, tomato paste, 150ml [250ml] boiled water and 1/2 tsp [1 tsp] sugar. Give everything a good mix up and cook for 3-4 min or until thickened – these are your homemade beans.
Step 4
Meanwhile, chop the cherry tomatoes in half. Slice the chestnut mushrooms finely and slice the ciabatta[s] in half. Remove the homemade beans from the heat and set aside for later. Wash the rocket, then pat it dry with kitchen paper.
Step 5
Once the sausages and chips have had 20 min, heat a large, wide-based pan (preferably non-stick with a matching lid) with a knob of butter over a medium-high heat. Once hot, add the sliced mushrooms and halved tomatoes and cook for 3 min on one side, then flip everything and cook for 3 min further. Transfer the softened mushrooms to the tray[s] in the oven alongside the chips and sausages to keep warm.
Step 6
Return the pan with the tomatoes to a medium-low heat and add another knob of butter. Crack the eggs into the pan. Cover with a lid and cook for 2-3 min or until the tomatoes are softened and the eggs are done to your liking.
Tip: Give your eggs a little shake before you crack for perfectly centred yolks!
Step 7
Meanwhile, reheat the homemade beans over a medium-high heat. Add the ciabatta halves to a toaster for 1-2 min or until warmed through. Spread the toasted ciabatta halves with butter and chop them into triangles. Serve the sausages, homemade beans, mushrooms, chips and cherry tomatoes with a fried egg, the buttery toasted ciabatta triangles and rocket to the side. Season with a grind of black pepper and enjoy!
