10 Easy Filling Breakfasts You Can Meal Prep
Ever think about life without breakfast? I do, and all I see is a barren wasteland of time stretching between my morning alarm and lunch time.
From sweet fluffy pancakes that some (not me) say are basically dessert, to the unctuousness of scrambled eggs. No other meal offers so much variety, or tastes better with a brew. So let’s talk about the most important meal of the day!
But you’re busy, time-strapped and tired, and I hear you. It’s a valid excuse for skipping breakfast. Until now.
Here are easy, filling recipes that anyone can meal prep, that you can’t wait to eat and will keep you full. It’s breakfast in its finest form. So throw on a Spotify ‘Best Breakfast’ playlist, and get ready to bosh together some brilliant breakfasts.
1) Make-ahead granola
There’s a time and a place for cornflakes, but early on a weekday when 10am slumps aren’t what your morning wants isn’t one of them.
Instead, make this. Bit of prep on Sunday, winning, filling crunchy balls of delicious all week long. Here’s my favourite granola recipe.
2) Healthy Peanut Butter & Banana Smoothie
The easiest smoothie recipe of all time. Milk (of your choice), PB powder, banana and cinnamon if you want it. Whizz, pour and done. Still hungry? Add some ground flaxseeds or even ½ package of silken tofu (the flavour is so neutral, you won’t even taste it). Click here for the recipe and get blending.
3) Frozen Breakfast Burrito
Who said eggs aren’t weekday food? Swap your fast-food muffin or bacon bap for this eggy, beany, spicy, make-ahead burrito. To reheat, pop them in the microwave for 2 minutes. Click here to meet the burrito for your next breakfast.
4) Homemade Granola Breakfast Bars
The oats and fruits are good for your body. But the chocolate chips will lift your spirits. You’ll find the recipe here.
5) Healthy Overnight Oats
If you’re not on the overnight oats train yet, hop aboard! There are so many combinations. Plus, you can make them high protein, there’s no need to heat, meal prep loads at once and they’re worlds better than microwave packets. See epic overnight oat combos.
6) Healthy Toasts With A Twist
Toast. The mother of breakfast foods. Literally. Always carrying the heavy loads, and there when you need her. So show her some love by switching same old PB or Marmite with more exciting ideas, like bringing some avocado, lemon and tahini to the office. Or strawberries and cheddar cheese. 7) BBQ Baked Beans
We have The Body Coach to thank for these homemade BBQ baked beans from his Smoky Tofu Nuggets, BBQ Beans & Wedges recipe. Quick, healthier than the canned stuff and smoky-sweet-delicious, meal prep a few batches for breakfast, add sausages, veggies or cheese and eat straight from a pot.
Here’s what you’ll need (4 portions)
- 2 cans cannellini beans
- 1 Knorr vegetable stock cube
- 64g tomato paste
- BBQ sauce
- 2 tsp sugar, honey, or agave
- Extras (cooked mini sausages, peas, diced carrots, grated cheddar cheese)
Drain and rinse the cannellini beans, then dissolve 1 Knorr vegetable stock cube in 250 ml boiled water
Heat a large, wide-based pan (preferably non-stick) with a small drizzle of vegetable oil over a medium-high heat
Once hot, add the tomato paste, cannellini beans, vegetable stock, hickory smoked BBQ sauce and 2tsp sugar and cook for 5-10 min or until thickened to a baked bean consistency – these are your BBQ beans.
Add any extras you like, fridge or freeze in pots and enjoy every morning.
8) Pre-made Free-From Pancakes
Just freeze and reheat our delicious free-from pancakes in the microwave (or in the toaster if they fit!) Because weeklong pancakes are the best kind of pancakes.
